Smokey Barbecue Eye Fillet on Summer Greens

Eye Fillets
350 gm
 
MasterFoods Smokey BBQ Marinade

Olive Oil

Sugar Snap Peas
100 gm
 
Rocket Lettuce Leaves
1/2 whole
 
Olive Oil
2 tbsp

Preparation

  1. Thoroughly coat eye fillet with MasterFoods Smokey BBQ Marinade.
  2. Cover and refrigerate overnight if possible.
  3. Heat olive oil on high in frying pan and seal the meat.
  4. Preheat oven to 300 Degrees Celsius.
  5. Place fillet in baking tray and cook for 12 minutes.
  6. Remove and allow to rest for 10 minutes.
  7. Meanwhile, blanch some asparagus and sugar snap peas.
  8. Strain and rinse under cold water.
  9. Put a handful of Cos and Rocket leaves on two plates.
  10. Top with sugar snap peas, asparagus and spring onions.
  11. Drizzle with balsamic vinegar and extra olive oil.
  12. Thinly slice the eye fillet and place on top.
  13. Season with MasterFoods Sea Salt and MasterFoods Black Peppercorns Cracked.
