Tomatoes Diced, canned
400 gm

Eggplant(s)

chopped 
Celery Stalk(s)

Capers
1 tbsp
 

Preparation

  1. Cut washed eggplant into 1cm cubes.
  2. Sprinkle with salt, mix well.
  3. Let drain in colander 1 hour, rinse,pat dry.
  4. Heat oil in large pan.
  5. Add onion, red capsicum and celery.
  6. Cook over moderate heat 5 minutes, stirring.
  7. Add eggplant and cook a further 5 minutes, stirring.
  8. Push tomatoes and their liquid through sieve.
  9. Add to pan with vinegar, sugar and MasterFoods Freshly Crushed Garlic.
  10. Cook for 2 minutes longer.
  11. Add sliced olives and capers, stir well.
  12. Simmer uncovered over moderate heat 15 minutes or until most of liquid has been evaporated.
  13. Season with salt and MasterFoods Ground Black Pepper to taste.
