You will need:

Recipe Ingredients

MasterFoods Freshly Crushed Garlic
1 tsp
MasterFoods Paprika Ground
2 tsp
1 whole
White Wine
180 ml
Vegetable Stock
900 ml
Tomato Paste
2 tbsp
MasterFoods Saffron
10 whole
Olive Oil
2 tbsp
MasterFoods Freshly Chopped Chilli
1 tsp
MasterFoods Turmeric Ground
1 tsp
Chicken Breast(s)
4 whole
MasterFoods Parsley Flakes
1 tsp
Shallots (or Spring Onions)
4 whole
finely sliced 
aborio rice
4 cup(s)


  1. Grate the orange, then juice it, set to the side.
  2. Add the MasterFoods Saffron threads to the hot stock and allow to rest.
  3. Heat the olive oil in a large saucepan and add the MasterFoods Ground Paprika, MasterFoods Freshly Chopped Chilli, MasterFoods Ground Turmeric and MasterFoods Freshly Crushed Garlic.
  4. Cook for 1 minute to release the aroma of the spices.
  5. Add the onions and chicken fillet (sliced into strips) and cook until onions are very soft and the chicken is cooked.
  6. Add the aborio rice and stir to coat, followed by the white wine, stir frequently while the wine is being absorbed.
  7. When all the liquid has disappeared,add the tomato paste, MasterFoods Parsley Flakes, orange juice and zest.
  8. Continue cooking and stirring the stock, half a cup at a time, stirring well after each addition.
  9. Continue in this manner until all the stock has been absorbed and the UNCLE BENS EXQUISOTTO is firm but tender.
  10. Remove the saucepan from the heat.
  11. Add the shallots and MasterFoods Freshly Ground Black Pepper and serve immediately.
