peeled, seeded, diced 
Lime Zest

1/4 tsp
 
Lemon Juice
1 tbsp
 
Lime Juice
1 tbsp
 
MasterFoods Coriander Leaves
1 tsp
 

Preparation

  1. Preheat oven to 220°C and lightly grease a 23cm x 35cm baking dish.
  2. Clean and scale snapper leaving head and tail intact, season with salt and MasterFoods Ground Black Pepper.
  3. In a medium fry pan, cook onion in olive oil over medium-high heat until translucent (about 2 minutes).
  4. Add MasterFoods Freshly Crushed Garlic and cook for 1 minute longer.
  5. Stir in tomatoes, lime zest and MasterFoods Mexican Chilli Powder.
  6. Increase heat to high and cook until sauce thickens (about 2 minutes).
  7. Cut off a large piece of aluminium foil and place fish in centre. Pour tomato mixture over and around fish and wrap loosely. Bake for 20-30 minutes (or until fish flakes easily).
  8. When cooked, transfer fish to a large serving platter and sprinkle with lemon and lime juices.
  9. Sprinkle with MasterFoods Coriander Leaves and serve immediately.
